Step 1: Prepare ingredients

  • 1 carrot, 1 corn, and 1 grated taro.
  • Soak 100g of wood ear mushrooms, and shiitake mushrooms in water and cut them into small pieces.
  • 100g vermicelli, soaked in water until soft, then cut into small pieces.
  • 50g purple onions, 50g green onions, washed and chopped.

Step 2: Process the filling

  • Mix 500g of minced pork and minced peeled shrimp.
  • Then add 2 egg yolks, 2 teaspoons of seasoning powder, 1 teaspoon of fish sauce, and 1 teaspoon of ground pepper.
  • Finally, add all the fruit and vegetable ingredients together. Mix well with your hands to absorb the seasoning.

Step 3: Make dipping sauce

  • Mix the dipping sauce in the following proportions: 50 g garlic, 10 g chili, 4 tablespoons fish sauce, 4 tablespoons sugar, 4 tablespoons vinegar, 16 tablespoons filtered water.
  • Stir until sugar dissolves and adjust according to each family’s taste.

Step 4: Roll spring rolls

  • Use square or round rice paper depending on the place.
  • Put rice paper on a large plate or cutting board.
  • Apply a little water to your hands and spread the rice paper evenly. Be careful not to soak in too much water or the rice paper will become mushy.
  • Put the filling on the rice paper, enough filling to roll. Fold both sides of the rice paper and roll evenly.
